Permata Singapore: New Indonesian Buffet in Singapore With Over 60 Dishes
Situated in the colourful neighbourhood of Kampong Glam, Permata Singapore (@permata.singapore) is a newly opened Indonesian restaurant offering a sumptuous buffet of Nusantara cuisine.
Permata, which means “jewel” in Malay, is inspired by the trade in the 1920s, where diamonds and gemstones were sold in Kampong Glam. Permata Singapore will be housed in a gorgeous heritage building - Gedung Kuning.
Translating to “yellow mansion”, Gedung Kuning is the former Malay Mansion of the youngest son of the Sultan of Johor. Boasting over 10,000 square feet, Gedung Kuning was built in the late 1850s. Its exterior was inspired by Palladian architecture, a European architectural style that was trendy back in the day. Like the former Istana Kampong Glam next to it, the interior of Gedung Kuning follows the design of a traditional Malay house.
Authentic Nusantara Cuisine in Singapore
Offering over 60 Nusantara-inspired dishes for both lunch and dinner, Executive Chef Firdauz Nasir is on a mission to elevate Nusantara cuisine in Singapore while ensuring that key nostalgic dishes such as Ulam (fresh salad), Kerabu (raw salad), and Lemang (bamboo rice) are also featured on the menu.
Pushing the boundaries in his cooking, Executive Chef Firdauz has added modern twists to the menu with dishes like Wagyu Beef Rendang, Ayam Binjai, Tempoyak Ikan Patin that pair perfectly well with Permata’s Signature Nasi Bunga Telang (blue pea rice).

Wanting to offer a truly premium Malay and Indonesian dining experience for buffet lovers in Singapore, Executive Chef Firdauz has curated a Seafood on Ice Station which features a selection of fresh seafood. From prawns and scallops to clams and mussels, Permata Singapore has it all. One of the highlights of this buffet is the huge chunk of stingray, charred to perfection.
